Should You Choose Induction When Renovating Your Kitchen?

If your Christmas dinner wasn’t the picture-perfect offering you had imagined when you started cooking – and it has you thinking about making changes to your kitchen appliances – these tips will help you decide what to look for.

 

The go-to stove for most people is a gas stove – but there are good reasons to choose induction cooking instead of gas.  For one thing, many condo owners do not have a gas supply available in their condos.  It’s important to note that just because you have a gas fireplace does not mean you can use this for a stove:  gas for a fireplace is at a much smaller capacity and pressure.

Because induction stovetops are relatively new to North America most people have not even used one.

Look at the benefits of having an induction cooktop and how its operation relates to a gas cooktop for comparison.

 

Advantages of Using Induction Stovetops

Speed:  because the actual glass cooktop does not heat the pot – the magnetic energy directly transfers to the pan which means faster cooking speeds. The speed is amazing – just try boiling water!  But the opposite is also true – turning the heat down is practically instant.

Energy efficiency:  less cooking time = energy savings; less heating of other surfaces – just your pot or pan and the food inside!

 

Safety:  induction cooktops heat only the pot; the glass surface gets warm from the pot but it’s not the source of heat and cools quickly.  Even while cooking you can lift a pot that boiled over, wipe the stove surface then put the pot back on and continue cooking.

Also – when the pot is removed from the stove the element turns off, even if the control is still left on so no worrying about whether you turned off the element.

Induction is safer than gas and great if you have young kids in your home or, for seniors wanting to age in place.

Temperature Control:  precise heat controls mean no waiting for burners to heat up or cool down – no more waiting for water to boil.  This is often the main reason people are driven toward gas stoves, but the same benefit is with induction.

 

Induction cooktops use an electromagnetic field to heat only the pot – magnets in the stovetop transfer heat to cook food. Cookware that’s designed for induction cooking has heavy metal bottoms that a magnet can stick to and are identified on the bottom with an induction symbol.

Easy cleaning:  because the cooktop doesn’t get hot, any spills or drips won’t get burnt on; simply wipe clean with a soft cloth or sponge. Gas stoves require removing grates and burner caps.
